(I know, I know… It’s Tuesday.)
I’ve been eating a ton of fresh veggies, which seems to be eating up our food budget WAY faster than usual, even after bumping it up to $250 (from $200) every 2 weeks. So, I had to “shop” in my fridge, freezer, and pantry. Luckily, I had enough “stock” to eek out 5 meals, which will get us to payday (can’t wait!)
My less-than-thrilling menu for the week is:
Unfortunately, the weather isn’t cooperating and giving me my Potroasty/ Shepherd’s Pie-ish/ Stroganoffesque weather that we had last week, but it’s what my wallet can afford. Some weeks, we just have to suck it up.
Next week, lots of BBQing, crisp salads, and maybe a dinner out (my birthday is next Wednesday, after all!)
