Monday: Peppercorn Pork Tenderloin with Roasted Balsamic Glazed Beets. On a whim, I picked up some beets at the produce market. Here’s to hopin’ I’m not the only one eating them!
Tuesday: Stuffed Bread: I’m thinking Ham and Cheese with Dijon Mustard. This is a trial run for my freezer group.
Wednesday: Chicken Bake: I’ve got this from my freezer group. Hopefully there is enough leftovers for the Hubby to take to work!
Thursday: Salmon Cakes
