Freezable February: Breakfast Burritos

At the many requests of my Facebook Fans, I give you the magical breakfast burrito recipe, as made by my friend Jen! Thanks, Jen!

Breakfast Burritos

Makes 40

3 dozen eggs

3 lbs of cooked bacon or sausage or a mix of the two

5 large russet potatoes

2 onions minced

1 cup milk

40 oz Shredded Cheese

40 tortillas

 

Wash and Slice potatoes super thin. Toss in EVOO and put on a baking sheet at 400 for about 30 minutes.

Cook meat of choice break into small pieces drain fat set on side to cool.

Mince onions sauté in pan add in potatoes finish cooking together and season to taste

Break up potato into small pieces like a hash brown cook them with onions until brown.

Once done set aside to cool some.

Crack eggs into a bowl and whisk them. Add 1 cup milk. Pour eggs in a pan and scramble.

Add in meat once eggs are set.

Divide meat and egg mixture, hash browns, and cheese among the tortillas. Add salsa if desired.

Roll up and put in a freezer bag. Freeze.

To eat: defrost and microwave 45 seconds. Enjoy!
